- When I started this journey in the summer of 2020, I was just trying to reverse my type 2 diabetes. Through various YouTube videos I discovered that a Ketogenic diet may help reverse my diabetes. I was inspired by a TedX Video by the late
- Dr. Sarah Hallberg and the Virta Health program. Reversing Type 2 diabetes starts with ignoring the guidelines... After 6 months on the program, it worked! My type 2 diabetes had beenreversed to a pre-diabetic state with an A1C of about 5.7 and I was off my diabetic meds Glipizide and Metormin. Then the cancer surfaced At first I thought the early symptoms of lower esophageal cancer (choking, hard to swallow) was a result of the new Keto diet as I would only have trouble eating at dinner a few times each week. I had heard of the “Keto Flu” and just lumped this together as part of the process… then it started with dinner and lunch… After a few weeks, it moved to dinner, lunch, and breakfast. NO, not my breakfast!!! as breakfast is my favorit meal! My primary care doctor suggested I get a barium swallow test. The results of the test warranted further scans and tests as “something” was down my feeding tube. In anticipation of the expenses of future tests, I actaveted my Veterans Administration care plan as I did not have health coverage. I used the VA 10 years prior, then discovering I had type 2 diabetes. Thankfully my Navel service to our country kicked in and the VA was going to cover most of the cost of treatment. I had 6/12 months to get my affairs in order.
- While on the Keto diet - and following Dr. Hallberg's suggestion to ignore the guidelines: I formed my own recovery plan- Chemo, Radiation and Starving the Cancer! aka Keto / Fasting (surgery was not an option as the cancer had spread to my lung). My number one tool from a metabolic standpoint was a “Keto Coffee or Bulletproof Coffee” - I would start each day with this 85 calorie drink. At first I was using a tablespoon, but am now down to a teaspoon. Here is the basic recipe
- 4 to 6 oz strong coffee
- 1 teaspoon MCT oil
- 1 teaspoon Coconut Oil
- 1 pinch liquid Stevia (now I”m using 1 teaspoon Allulose)
- Mix in an immersion blender as oil /water doesent mix), now your black coffee with oil floating on top will look like cream has been added
